Paleo honey and seed bar
I can not claim this recipe as my own at all. This is one that Rory pulled together as he has taken stay-at-home parenting to the next level. This raw, paleo, refined sugar free, kindy-friendly (aka nut-free) seed bar is tasty and good for you. Double win.
1 ripe banana
2 tablespoons coconut oil
4 tablespoons tahini
3 tablespoons honey
pinch salt
1 teaspoon cinnamon
100g pumpkin seeds
100g sunflower seeds
100g goji berries (or cranberries)
2 tablespoons chia seeds
4 tablespoons sesame seeds
Combine the coconut oil, tahini and honey in a pot and warm until soft but not melted. Add to a food processor with all of the other ingredients and pulse until well combined and sticky. Spoon out into a dish lined with baking paper and put in the fridge for at least 4 hours before cutting. Will last for up to 1 week in the fridge.
