Honey oat clusters

Whenever I get a spare five minutes I love to throw together some baking. This recipe is great as it’s super fast to make, pretty hard to mess up and you can customise it to suit your taste. It’s also an easy one for the kids to help with. I reckon that because they contain oats it totally counts as breakfast.

 The cranberries and chocolate chips can easily be replaced with whatever kind of dried fruit you have in the pantry; almond and date, apricot and white chocolate, the options are endless!

Ingredients

2 large bananas

2 cups rolled oats

1 cup shredded coconut

1/2 cup cranberries

1/2 cup dark chocolate chips

1 teaspoon vanilla essence

1/3 cup coconut oil

2 tablespoons honey

 

Pre-heat the oven to 180 degrees celsius.

 In a large bowl, mash the bananas with a fork. Add the oats, coconut, cranberries, chocolate chips and vanilla essence. In a saucepan or in the microwave, melt together the coconut oil and honey. Add to the bowl with the other ingredients and mix well to combine.

The mixture will seem a bit crumbly but when you squeeze a tablespoon full together in your hands it should form a ball. Form all of the mixture into balls, place on a lined baking tray and flatten slightly. Bake for 15-20 minutes or until slightly golden on top.
