Honey Meringue
Ingredients:
100g water
40g glucose
200g sugar
4 large egg whites
1/2 tsp lemon juice
pinch of salt
20g honey powder
Combine water, glucose and sugar in a saucepan and heat to 115 degrees celsius (use a candy thermometer).
In the meantime beat the egg whites, lemon juice and salt until stiff peaks form. Keep your mixer beating while you slowly and steadily add the hot sugar liquid. Once you have added all of the liquid, sprinkle in the honey powder and continue mixing until just combined.
Pipe onto a baking tray and bake overnight at 60 degrees celsius.
