The inspiration for this utterly delicious dessert cocktail came from local artist Hayley Hamilton who attended one of our Beekeeping Experiences this summer. She told us about this addictively sweet cocktail she had been making over Christmas for her family. Once we knew that Good George would be doing a limited release gin with our Mānuka Honey, we knew we had to give this cocktail a go, and now we are hooked too.
The rich, gingery, sweet flavour makes it perfect as a dessert cocktail or late afternoon treat.
1 measure (30ml) honey ginger syrup*
2 measures gin
2 measures fresh cream
Honey powder for dusting the rim
Put all of the ingredients in a cocktail shaker and shake until smooth, creamy and cold. Run the rim of a martini glass through honey powder to dust, and pour the cocktail mix in. Enjoy!
*Ginger honey syrup: this is like a simple syrup, but made with honey instead. Take one piece of ginger, about 5cm long and slice into small pieces. Add to a saucepan with 100g of honey and 100ml of water. Heat gently on a low heat and simmer until it has reduced but about one third. Store in a glass jar in the fridge and use as needed. Flavour will develop over time.
