Bee's Knees Cocktail
The Bee’s Knees is a classic for a reason. It’s a simple three-ingredient cocktail that relies entirely on the quality of what you put in the tin. By using our West Coast Blend, you’re adding a layer of wild floral notes that standard honey just can’t replicate. It’s bright, a little bit sophisticated, and incredibly easy to whip up at home. And it's classy enough that no-one will notice you are day-drinking.
The Ingredients

60ml (2 oz) Quality Dry Gin

22.5ml (¾ oz) Freshly Squeezed Lemon Juice

22.5ml (¾ oz) West Coast Blend Honey Syrup (recipe below)

Garnish: A simple lemon twist or dehydrated lemon slice.
The Method
Add your gin, lemon juice, and honey syrup into a shaker. Fill with plenty of ice and give it a solid shake for about 15 seconds. You want it cold enough that the shaker starts to frost. Strain into your chilled glass to keep it smooth. Twist the lemon peel over the drink to release the oils, give it a quick swipe around the rim, and drop it in.
If you’re skipping the alcohol, you don’t have to skip the flavor. This version keeps the honey front and centre.

Top with: Sparkling water or a non-alcoholic botanical spirit

The Twist: Muddle a couple of fresh mint leaves or a slice of cucumber in the bottom of your glass before adding the rest.
How to make it: Stir the honey syrup and lemon juice together in a tall glass with ice, top with sparkling water, and give it a gentle stir. It’s crisp, floral, and perfect for a sunny afternoon.
The Honey Syrup
To make sure the honey blends perfectly into cold drinks (instead of clumping at the bottom), you’ll want to make a quick syrup first:
Combine equal parts West Coast Blend Honey and warm water. Use warm water, not boiling, to keep those delicate floral aromatics intact. Stir until dissolved. Keep it in a jar in the fridge. It’ll stay fresh for up to two weeks and is great in coffee or over fruit, too.
