Honey and Pumpkin Tuile
Ingredients
300g roasted pumpkin flesh
20g glucose
100g isomelt
80g icing sugar
10g honey powder
pinch of salt
extra honey powder for rolling
Combine all ingredients in a blender and blend until smooth. Create a mould by cutting a rectangular hole roughly 15cm x 10cm in a piece of thick card. Place the mould on a sheet of baking paper and spread a thin layer of pumpkin mixture over the mould. Remove the mould and repeat to fill your baking paper sheet. Bake for 2 hours at 85 degrees celsius. Remove from the oven and wrap each tuile around a metal cylinder mould to create a tube. While the tuile is hot, roll it in a shallow dish of honey powder to add more flavour.
Fill with your choice of filling, and sprinkle a little more honey powder on top if you wish.
