Nothing says autumn quite like spiced apple. The spicy sweet smell that fills your house while the apples are stewing is an added bonus to this old fashioned but delicious slice.
Ingredients
4 apples, peeled and sliced
2 tablespoons of Chai Spice Honey (more if you are using tart apples like Granny Smith)
1/4 cup water
2 cups flour
1 teaspoon baking powder
125g butter, cut into small cubes
1/4 cup sugar
1 egg, beaten
2 tablespoons milk
icing sugar to dust
Method
Gently simmer apple, Chai Spice Honey and water in a pot on a low heat for 10 minutes until the apples are soft. Sift flour and baking powder into a bowl. Rub the butter into the flour until it resembles coarse breadcrumbs. Mix in the sugar, egg and milk. Mix together and knead with your hands until it forms a smooth, soft dough. Form into a ball, cover and refrigerate the dough for 30 minutes. Once chilled, divide the dough in half and roll out each piece to fit a 22cm square cake tin. Line the tin with baking paper and lay one sheet of dough into the bottom of the tin. Spread the apple over the dough and cover with the second sheet of dough; like a dough + apple sandwich. Bake at 180 degrees for 25 minutes. Cool. Dust with icing sugar and cut into squares.
