Salted Honey Ice Cream This. Is. Good. So, so good. Best of all it’s easy. If you can whip cream you can make this ice cream. I’m a big sucker for anything containing salted caramel so when I saw this recipe on Pinterest (where you can also find and follow Hunt and Gather Bee Co, just by the way) I couldn’t wait to try it. For this recipe, you really need to use a good quality honey (like ours). The honey flavour is the main flavour in this ice cream so supermarket honey just wouldn’t cut the mustard. Homemade Manuka Honey Marshmallow

Homemade Manuka Honey Marshmallow I guess this whole story starts with marshmallow. But I'll let it tell itself. Ingredients 225g sugar 225g water 2 tbsp powdered gelatine 120g icing sugar 2 tbsp manuka honey 1 tsp vanilla paste 50g desiccated coconut Bring sugar, water and gelatine to the boil in a pot and let simmer for 8 minutes. Place in the bowl of an electric mixer and whisk on high for 3 minutes. Add icing sugar, honey and vanilla and whisk on high for another 5 minutes, until light and fluffy.
