Homemade Manuka Honey Marshmallow
I guess this whole story starts with marshmallow. But I'll let it tell itself.
2 tbsp powdered gelatine
120g icing sugar
2 tbsp manuka honey
1 tsp vanilla paste
50g desiccated coconut
Bring sugar, water and gelatine to the boil in a pot and let simmer for 8 minutes. Place in the bowl of an electric mixer and whisk on high for 3 minutes. Add icing sugar, honey and vanilla and whisk on high for another 5 minutes, until light and fluffy.
Place in a lightly greased tray and allow to set for 2-4 hours in the fridge.
Toast coconut in a pan or in the oven (don't leave it unattended as it will burn very quickly). Allow coconut to cool. Cut marshmallow into cubes and coat in the coconut. Store in an airtight container in the fridge.
